berry crisp

we bought a ton of berries at costco this week.  i didn't want them to go bad, since we couldn't possibly eat ALL of those strawberries and blueberries for breakfast so...berry crisp it was.  and, i had a fantastic little helper who loves getting her hands gooey :)

do you have a sugar bee? these things are fantastic.  they are terra-cotta and once soaked in water, will keep your brown sugar from hardening.

oh the anticipation...unfortunately, she had to go down for her nap while baking but...that means a tasty surprise when she gets up!!!

it was a hit for a post-nap snack :)

 

 

BERRY CRISP RECIPE

filling

6 cups berries (or any kind of fruit)

1 tablespoon cornstarch

1/4 cup sugar

pinch of salt

topping (just a side note...i like my crisp with extra topping so i actually take this recipe and make 1 1/2 times the ingredients to put on top!)

1/2 cup flour

1/2 cup quick oats

1/4 cup packed light brown sugar

1/4 cup sugar

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

3/4 cup chopped pecans (optional)

1/2 stick room temperature unsalted butter, cubed

directions

preheat oven to 375 degrees F.

toss filling ingredients together in a bowl.  pour into a 2-quart baking dish.

in a separate bowl, combine topping ingredients. pinch together with fingers until crumbly.  pour over filling ingredients, evenly.

bake for 40 minutes.
