couscous
this is our second day of eating leftovers of the delicious couscous my brother in law made for mother's day dinner. the bird LOVES it. she is even saying "cssshhhh csssshhh" (birdy speak for couscous) every time i ask her if she wants a bite. pretty cute. we love it so much, my brother in law was nice enough to share his quick recipe so that i could share it with you! the fun thing is, you can doctor it up however you would like, i've also made it with pine nuts and finely chopped dried apricots. in fact, that one might be on my to-do list soon. enjoy! joel's made from scratch recipe:
1 box plain couscous
2 cups of vegetable or chicken stock (instead of water)
2-3 green onions sliced fine
1 can artichoke hearts (drained)
1/3 C. fresh parsley chopped fine
2-3 roma tomatoes cubed (remove pulp and seeds)
1/3 C. red onion chopped
juice from one medium lemon
3-4 Tbs. extra virgin olive oil
garlic power to taste (or real garlic)
sea salt to taste
pepper to taste
prepare couscous, per instructions on the box, and allow to cool. then combine with remaining ingredients. serve warm or cold. you could also add some cucumber or sprinkle feta on top....it's that easy! thanks joel!
