cheddar curry fondue

yes, we LOVE fondue.  we probably make it once a month and have a few favorite recipes.  this is one of them:  sharp cheddar+curry.  

curried cheese fondue

1 garlic clove, halved

2/3 cup dry white wine

1 teaspoon lemon juice

2 teaspoons curry paste (just add a touch of water to your curry powder to create a paste)

8 oz. grated gruyere cheese

8 oz. grated cheddar cheese (i prefer sharp)

1 teaspoon cornstarch

2 tablespoons dry sherry

 

directions

1. rub inside of fondue pot with cut garlic clove.  2. pour wine and lemon juice into fondue pot and cook over medium heat until bubbly.  3. turn heat to low and add curry paste.  4. gradually stir in cheeses.  5. in a small bowl, blend cornstarch and sherry.  pour into cheese mixture and continue stirring until thick and smooth.  do not allow fondue to boil.

makes 4-6 servings

we serve ours with bread chunks, apple slices, red grapes, and pan fried apple turkey sausage.  a granache red wine is a pretty good companion to this meal as well!
